I love making this soup on a cold winter or fall day. It is lazy proof! all you need is a few vegetables and about 45 minutes and you have  a warm, filling and satisfying creamy soup. No excuses! you don’t have to be a great cook to blend up a few veggies and your friends or partner will enjoy this dish as well or if you’re like me you can eat it all by yourself and keep some for later. I made this recipe up years ago when I was craving a warm soup and had to use whatever I can find in my pantry and I have been making it ever since.

Instructions
  1. Add the butternut squash, sweet potato, carrots and vegetable broth to a large pot and cook, covered for about 30 minutes until all the vegetables are soft and tender
  2. Add the vegetables with some of the liquids to a blender. Let the vegetables cool a little before blending. Add the fresh basil and some salt and pepper to taste and blend until the soup is smooth and creamy.
