Shakshouka is a dish of eggs poached in a sauce of tomatoes, chili peppers, and onions. Originally originated from North Africa, Shakshouka is very popular in Israel, often served for breakfast. This is a vegan version of that dish made with tofu instead of egg. It might look a little sloppy at first sight but it’s nutritious and delicious savory breakfast option you can eat any time of the day.

Varying ideas

  • You can add nutritional yeast at the end of the cooking.
  • Add dried oregano seasoning, if desired.
  • Add a pinch or two of Cayenne for a little more kick.

Dipping pieces of bread in the Shakshouka and eating them with the sauce is also common practice.

Instructions
  1. Cut the tofu into cubes and mash it with your fingers into a fine crumble. Small dice the onion. Mince the garlic. Dice the bell pepper and set aside. Grate the tomatoes with a grater or alternatively process in a food processor into a sauce. When cooking any recipe it is advised to have all your components prepared prior to cooking so you can add everything at the right timing.
  2. Heat up a frying pan with olive oil and saute the onion until it's golden. Add the garlic, followed by the tofu crumble, stir and continue cooking for a couple of minutes.

  3. Add the diced bell pepper and stir, season with paprika, salt & pepper. Next add the tomato mixture and tomato paste, stir and continue cooking for a couple more minutes. Serve warm.
