I was making assorted truffles recipe for a desserts class I’m going to teach and a benefit event and everyone are obsessed with these pumpkin pie truffles. They do not require any baking and are very simple to prepare.

Instructions
  1. Place almond butter, pumpkin puree, coconut butter, maple syrup and pie spice in the bowl of a food processor fitted with an S shaped metal blade. Process until smooth and scrape down sides with a spatula as needed.
  2. Stop the food processor and add almond flour. continue to process until a dough forms.
  3. Roll the dough between your palms to form 10 equal sized golf-sized balls. Place on plate or parchment lined tray in the fridge and allow to chill at least 30 minutes.

  4. To prepare the chocolate ganache chop the chocolate and place in a large mixing bowl. In a small sauce pan heat up the almond milk until it starts to bubble. Do not over heat and scorch the milk. Pour the milk over the chopped chocolate to cover and let sit untouched for 5 minutes. Using a whisk whisk the milk and chocolate together until the chocolate is all melted. Add the olive oil and vanilla extract and whisk to combine. Let the chocolate sit and cool at room temperature for about 30 minutes before dipping.
  5. Using a fork or wooden skewer, carefully dip truffles one at a time into the melted chocolate, rolling and dunking until evenly coated on all sides. Sprinkle with chopped almonds, sprinkles or additional pumpkin pie spice, if desired.

  6. Transfer to a parchment lined baking sheet and return to the fridge until chocolate hardens.
  7. Store the truffles in a covered container in the fridge for up to 10 days.
