These easy to make vegan gingerbread cookies are sure to be a hit at your Christmas party! I served them at a potluck and my friends loved them. It is so simple to make with just a few ingredients, no excuse showing up to the party empty handed! The cookies can be decorated however you like, have fun with it! The gingerbread man cookie cutter I have is rather large so you may be able to get more cookies out of the batch if you use a different cookie cutter.

Instructions
  1. Pre-heat the oven to 350°F
  2. In a large mixing bowl sift together the dry ingredients: flour, sugar, baking powder, cinnamon powder and ginger powder and whisk to combine. Add in the molasses, vegan butter (cut into small pieces) and almond milk. Fold and knead until it's a smooth dough.
  3. Cover the dough in plastic wrap and let rest in the fridge for about 20 minutes.
  4. Roll out the dough on a floured surface or between two sheets of parchment paper until it is about half an inch thick and cut out the cookies with a cookie cutter until all the dough is used up.

  5. Using a wide metal spatula gently transfer the cookies onto a baking sheet and bake them in the oven for about 12 minutes. Let them cool off completely, before munching them or decorating them further.
