Who doesn’t love pancakes for breakfast (or dinner…)? Now that cranberries are in season I decided to try adding them to a basic vegan pancake recipe. If you are not a fan of cranberries, no problem, any other berry, banana or dairy-free chocolate chips will do. Who says you have to use eggs and dairy in pancakes? these vegan pancakes are cholesterol free and just as delicious as any pancakes. Of course you can add any toppings of your choice or anything else you like to the batter but this is a good base for vegan pancakes.

Varying ideas:

Replace cranberries with blueberries or even dairy-free chocolate chips

Instructions
  1. Add all ingredients to a bowl and whisk to combine until a smooth batter forms.
  2. Lightly oil a non-stick frying pan and heat on medium heat. Using a ladle drop the batter on the hot pan and cook until the pancake starts to bubble. Flip and cook the other side,
  3. Transfer to a plate and serve warm with maple syrup or other desired syrup.
