This Vegan beet cakes recipe is another one of my experimental recipes using very few simple ingredients found in my fridge & pantry. Making patties is one of my favorite solutions to a filling side or main dish to snack on. These beet cakes are actually healthy and also gluten free. I know that for some people beet is an acquired taste so if you’re not a fan of beets try replacing them with butternut squash.

Some health benefits of beets:

  • Beets are good at preventing skin, lung, and colon cancer since they contain a pigment named betacyanins, which studies have revealed counteracts cancerous cell growth.
  • Beets are known for improving liver health
  • Beetroot is a source of vitamin C, which helps prevent asthma symptoms.
  • Beets have been considered an aphrodisiac or sexual booster.
  • Beets also contain a significant amount of carbohydrates that provide energy for prolonged sports activities

Instructions
  1. Peel the beets, cut into quarters and cook in water in a large pot, covered with a lid for about 40 minutes.
  2. Peel the potato, dice and add to the pot, continue cooking for additional 20 minutes or until the potatoes and beets are fully soft.

  3. Strain and transfer the potato and beets into a large bowl and mash up into a puree. Add the rest of the ingredients and mix to combine. If the mixture is too water add more flour as needed.
  4. With your hands and a spoon make little flat patties. Heat up a little oil in a frying pan on medium heat. Cook the patties on both sides until they are slightly browned (about 10 minutes). I used non-stick pan and very little oil.

  5. Place on a plate with paper towel to absorb the oils. Serve warm.
