Orange lentils are magical, they thicken any soup like most legumes, and they also only require about 30 minutes of cooking and don’t have to be soaked over-night. Here the lentils were added to an orange colored sweet potato soup for a rich and filling wintery soup that can be served as a side or even entree. I like serving this soup over a bed of rice too¬† and its very satisfying and easy to make on a cold winter day.

Instructions
  1. In a large pot heat up the olive oil and diced onion. Saute the onion until slightly golden and then add the garlic.
  2. Add the sweet potato, carrots and spices and cook for 5-10 minutes, stirring frequently. Add the water and red lentils and bring to a boil.
  3. Lower the heat and low simmer for approximately 30 minutes until the lentils are fully cooked and tender and the the sweet potato and carrots are soft
  4. Blend using immersion stick blender and add salt & pepper to taste. While still warm, toss in the spinach leaves (if using), serve and enjoy!
