Here is yet another simple and easy to make vegan dessert recipe I made for a party today. The strawberry jam can be replaced, I just used what I had available and I liked the flavor combination. The lavender is also optional, I just love the flowery aroma of the lavender and I must admit I am a lavender fan so if you don’t like it feel free to omit that. This sweet snack recipe is excuse free and it’s vegan and fairly healthier than other sweet treats! this is really easy and fun to make with kids too, like playing with play-dough, they love rolling it in the coconut and of course eating it too. I made it with the kids at the Boys & Girls club where I volunteer and they had a lot of fun with these.If the mixture is too thick add another tablespoon or more of the almond milk as needed. The coconut flour absorbs a lot of the liquids so sometimes you need to adjust to get the consistency you need. It should be thick and stick together well between your fingers.

Varying ideas:

You can try switching out the jam with any other flavor jam (preferably seedless) for different flavor combination.

Try swapping the coconut flour with almond meal

Add a different flavor extract like mint for a slightly different flavor combo

Instructions
  1. Process all ingredients except for the shredded coconut, in a food processor into a uniform mixture.
  2. Spread the shredded coconut on a plate or in a shallow bowl. Use a 1 tablespoon cookie scoop or just pick out even amounts of the dough with clean hands and roll the mixture into small balls. Once you processed the batter, make sure you roll it into balls straight away, otherwise if it sits around too long, the coconut flour can cause it to dry out.

  3. Roll each ball in the shredded coconut and set aside and then them rest a few minutes. The balls can be eaten fresh or chilled.
