Vegan gluten free peanut butter cookies! yes! Ok, these cookies are so addictive! they melt in your mouth. The great thing is they are both gluten free, vegan and super easy to make. Literally a child could make those. I’m warning you, once you start munching on these, it’s very hard to stop. Cookies so soft, you will be surprised that there is no need for eggs or butter. I know that creamy peanut butter is not as healthy but I found that the natural nut butter is too runny and will not give you the best results. My favorite part of vegan baking is that, since there are no raw eggs, you get to eat as much raw cookie dough as you could possibly want. Watch out, you might end up snacking on those before they even make it to the oven. Only 5 minutes to prep and 10 minutes to bake – it’s the perfect last minute snack for your family or guests. My friends are now hooked on this recipe too and made them way too many times.
You can add a little cacao powder or dairy free chocolate chips to the mix for a more chocolaty flavor. I also like swapping the vanilla extract with almond extract or other flavors.
