  1. Crush the garlic over a large bowl, then add the lemon zest, lemon juice, salt and pepper. Whisk in the olive oil and set aside while you prepare the cauliflower.

  1. Preheat your oven to 450°F. Remove the large florets from the cauliflower and cut them into even-sized pieces. The larger florets can be sliced in half. Place the cauliflower pieces into the bowl with the dressing and toss to coat well. Cooking time may vary based on the size of the pieces and how done you like your cauliflower to be.
  2. To roast the cauliflower, line a baking sheet with parchment paper. Lay any flat pieces of cauliflower cut-side down, so they caramelize nicely. Roast for about 10 minutes before tossing. Check the oven again after about 10 minutes or until it is almost cooked through and slightly darker.
