This simple roasted Cauliflower recipe makes for a nice and light low carb side dish. It’s simple, and fairly quick to prepare and you can throw it in the oven while you’re cooking the rest of your meal. Additional seasoning of your choice can be added to the dressing based on your taste. Curry powder can work nicely with this dish as well if you want to add a little spice. The acidity of the lemon juice helps preserve the white color in the cauliflower and adds a nice fresh tartness to it. I am totally addicted to this now and make it all the time when I’m short on ingredients for more complex recipes.
I also like to drizzle some Tahini dressing over the roasted cauliflower for extra flavor and health benefits.
There is a middle eastern dish of friend cauliflower with Tahini that I love but this is a far less fatty version since the cauliflower is roasted and not deep fried.
