If you have guest coming on a short notice, these easy chocolate cupcakes would to the job! With only 5 minutes of preparation and about 17 minutes of baking you will have a delicious vegan dessert. These are great for a birthday party too. The chocolate pieces melt in your mouth when the cupcakes are still a little warm (yes, I couldn’t help myself from tasting them).

If you want to add frosting, I had different flavor frosting ideas in my other cupcake recipes.

Instructions
  1. Preheat your oven to 350F and prepare a muffin pan oiled or lined with cupcake liners.
  2. In a large bowl sift together and mix all the dry ingredients.
  3. In a separate medium bowl mix together all the wet ingredients to combine well and then add into the dry ingredients and whisk together to form a smooth batter. The batter should be a little runny.
  4. Using a large ice cream scoop, distribute the batter evenly into the pan and place a couple of pieces of chocolate on top of each cupcake. (make sure not to over-fill as the cupcakes will rise slightly when baked)
  5. Place on the middle rack in the preheated oven and bake for approximately 17 minutes. Insert a toothpick to the center of cupcakes to ensure that they are dry. Leave the cupcakes out to cool for about 10 minutes and transfer to a cooling rack to chill completely before serving.
