So, I’ve been on a cookie mission lately… Trying to perfect my cookie recipes for an upcoming event, This recipe was another “whats in my pantry” experiment. sometimes I just dig around for what I have and come up with a delicious treat. These cookies are soft like wafer cookies and crispy. These are perfect from when you are craving a sweet treat but want to have something that is not too loaded with sugar to satisfy that craving. These cookie can be varied by adding lemon/orange zest & juice, other types of flavored extracts, the choice is yours.

Instructions
  1. Heat the oven to 45 Fahrenheit
  2. While the oven is heating, line a cookies baking sheet with parchment paper or silicone mat. In a medium mixing bowl sift and mix together the flours, carob powder, cacao powder, chocolate extract, baking powder, oil and maple and mix until you get a thick, brown dough with no visible flour. If the dough is too dry and crumbly gradually add 1-3 more tablespoons of oil. If the dough is too wet and sticky gradually add 1-3 more tablespoons of flour and continue mixing and kneading the dough slightly with your hands to form a ball. The dough should be thick and shiny.
  3. On your counter spread a parchment paper, place the dough over the paper and cover with another sheet of parchment paper and flatten the dough using a rolling pin until the dough is about 1/2 to 3/4 inch thick. Cut the cookies into your desired shape using a cookie cutter. The smaller the cutter the more cookies you will have.

  4. Gently and place on the prepared baking sheet as they are very delicate and can break. I use a flat metal spatula to lift and place the cookies. Bake the cookies in the middle rack for about 12 minutes and then leave out to cool completely. The cookies will become more crispy as they cool. Serve with your favorite hot beverage and enjoy!
