A dessert recipe I recently made for my friend who loves Nutter Butter cookies inspired these little nuggets. I decided to make a quick and easy to make snack for the peanut butter lovers out there. It started as just a peanut butter snack but I ended up adding cocoa powder into the mix because it was too creamy and sticky. It only takes a few ingredients, a few minutes, and a food processor to make. I like to roll them in cacao powder and serve cold. These are so rich and creamy, melt in your mouth, and are so addictive so beware!

Instructions
  1. In a food processor fitted with metal blade add the nutter butter cookies and pulse to a fine crumb texture.
  2. Combine all the rest of the ingredients together (except for the 1/2 cup extra cacao powder) with the cookie crumble and continue pulsing until a firm batter is formed.
  3. Sift the extra cacao powder into a small bowl or a plate through a fine sieve to avoid clumps. Sprinkle a little of the powder on your hands to avoid sticking.
  4. With a spoon and your hands, scoop and roll golf-sized balls from the mixture into a bowl with cacao powder and set in the fridge to cool for at least 2 hours in a tight lid container. I like placing mine inside small mini-cupcake liners. These treats will stay fresh in a fridge inside a container for a few days but preferably eat fresh.
