I love this Mediterranean orzo salad. Orzo, also risoni, is a form of short-cut pasta, shaped like a large grain of rice. I used a few ingredients mixed in with the orzo. I also like to add some chopped kalamata olives but I didn’t have any available when I photographed this recipe so I left them out. If you are looking for an easy dish for one or two, orzo cooks pretty fast and you can mix in all kinds of stuff with it.

Orzo reminds me a little bit of Israeli couscous in flavor and size (I also love cooking with Israeli couscous when I’m short on time). This recipe includes some fresh ingredients and flavors commonly used in Mediterranean cuisine such as olive oil, fresh basil, pine nuts, artichokes and tomatoes.

Suggestions for varying this recipe:

  • Add a squeeze of lemon for a tangy and fresh taste while cooking the vegetables.
  • Add chopped kalamata olives.
  • Season with dry herbs such as oregano, basil, thyme.
  • Add a clove of crushed garlic

Instructions
  1. To begin fill in a small to medium pot with water (about 3 quarters). Add a pinch of salt to season and bring water to a boil. Once the water is boiling throw in the orzo pasta and cook for about 10-12 minutes until the orzo is soft.
  2. In a frying pan saute the shallot with the olive oil until it starts to soften and caramelize. Next add the pine nuts and continue to saute, stirring frequently for about 2 more minutes.
  3. Add the chopped grape tomatoes and artichoke hearts and season with salt & pepper, to taste. Continue cooking for a few more minutes.

  4. Once the orzo is cooked, remove from heat and strain. Toss the orzo into the pan with the saute vegetables and mix to combine. Add more salt & pepper, if desired. To serve chop the green onion and basil and toss into the salad and mix well. Can be served warm or cold.
