This recipe makes for a quick and easy dinner idea, it is low fat and oil free and can be made with different vegetables such as mushrooms, potato, carrots… This dish can be served over rice, quinoa, couscous, pasta or on its own as a side dish. (Shown here with herb & pine nut whole wheat Cous Cous). It only takes a few minutes to make too. To make preparation easier, you should prepare all of the ingredients ahead as the oil free cooking will go quickly and you don’t want the food to burn.

Instructions
  1. First, gather and prepare your ingredients, chop and slice all the vegetables and set aside. The Zucchini can be substituted with carrot or potato.

  2. Bring a large fry pan to medium heat. Add the shallots and cook until they begin to stick. Once they begin to stick, add the garlic and zucchini (or choice of vegetable). Stir well until the Zucchini also begin to stick. Be careful not to let it burn.

  3. Next, add vegetable stock and deglaze the pan. Sauté until the ucchini have released its liquid and the pan is almost dry - about 4 minutes. Gently stir in the chives, season with sea salt and freshly ground black pepper, to taste.
  4. Serve as a topping to rice, cous cous, quinoa or just as a side dish. This can even be tossed with your favorite pasta for an oil-free option.
