This is a great side dish I love to make along with other light Mediterranean or Middle Eastern dishes. Growing up in Israel, a chopped salad was always a staple in my family. We would even often eat a salad for breakfast. Sometimes I add chopped black kalamata olives or  sunflower seeds to this dish and change it up based on what I can find in my kitchen. This salad is refreshing, quick to make and taste great.

Instructions
  1. In a large bowl, combine the onions, cucumber, tomato, parsley, cabbage and red bell pepper.

  2. In a small bowl, whisk in tahini sauce, lemon juice, olive oil. Toss into the large bowl with enough dressing to coat, and season to taste with salt and pepper. Serve as a side dish. Can be served fresh or refrigerated for additional day if needed.
