Impress your guests with this delicious and super easy to make chocolate dessert. I brought these to the office and they were gone in no time. These can also be made into a one large pie using a 9″ pie dish instead if you don’t have individual pie pans. It is such a simple dessert, yet very rich chocolate taste and it’s of course cholesterol free since it’s vegan.

Instructions
  1. Preparing the Crust: To make the crusts, combine together the nuts and sugar in a food processor with a metal blade. Process until the mixture resembles a fine meal. Add the salt, coconut oil, cacao powder and optional chili powder and pulse to combine well into a crumbly mixture. Divide the mixture equally between the 5” tartlet pans. Press and shape the mixture into the bottom and sides of the pans with your fingers to make a pie shells. Preheat the oven to 350°F
  2. Preparing the Filling: Place the chocolate chips in a baking tray and transfer to the oven and heat for 3 to 4 minutes or until the chocolate is melted. Remove from the oven immediately (chocolate can burn quickly so do not over heat)
  3. While the chocolate is melting, combine the tofu & vanilla extract in a food processor with a metal blade, then add in the melted chocolate and blend until very smooth.
  4. Pour the mixture into the little pie shells you prepared earlier, smooth the top with a spatula and refrigerate for at least 20 minutes or until the cream looks firm. Remove the pies from pans and sift some cacao powder over if you wish and serve.
  5. *Note: I found that silken tofu is sometimes hard to find at the local grocery stores (I ordered a big pack from amazon). If you can’t find silken tofu, you can also use soft block tofu instead. In this case, the tofu often comes in 150 gr or 300 gr packages.
