These delicious Indian veggie samosa burgers are inspired by Indian samosas appetizer, with potatoes, green peas and curry seasoning. They are delicious and filling and a healthy alternative to store-bought veggie burgers. Make sure to cut the cauliflower into very small florets so it’s easier to combine with the rest of the ingredients and not too chunky. The cashews add additional crunch and healthy fats. You can serve those as-is or on a bun with additional veggies and condiments of your choice. In my culinary training I learned to prepare different variations of veggie burgers and being a lover of Indian food, these are my favorite. Although I love eating real samosas I try to cut back on them since they are very high in calories. This is my solution.

Instructions
  1. Preheat the oven to 400F.
  2. Gather and prepare all your ingredients. To prepare the burger mix toss all the ingredients together in a large mixing bowl and press the potatoes into the mixture to bind it. You may need to add more or less of the cashews depending on the moisture of the potatoes.
  3. Using a metal ring mold press and form into burger sized patties. Lightly spray a baking sheet and place the veggie burgers on a baking sheet lined with parchment paper.
  4. Bake for approximately 15 minutes on each side until the burgers are golden on each side. To serve you can assemble the burgers in buns with your favorite veggies and condiments.
