Instructions
  1. Add the avocado, cacao and maple syrup to the bowl of your food processor or high speed blender. Process until it is smooth and creamy.
  2. Set your stove to medium heat and place a small pot of water on it to gently simmer. Place a heat proof bowl over the pot and gently melt the chocolate and coconut oil, stirring frequently. Once melted, add the melted chocolate to the food processor and process to combine with the rest of the ingredients.
  3. Transfer the mixture to a bowl and refrigerate 1-3 hours to firm up so that you can roll them.
  4. Scoop small balls of the truffle mix (I like using a small ice cream scoop) and role into balls in my hands.
  5. sift some more cocoa powder into a plate or ball and roll the truffles into the powder. Place in a fridge in a container fitted with a tight lid for up to 3 days.
