I remember when I was a kid one of my favorite things to do was making chocolate balls. I love making up simple snack recipes. These are so versatile and can be made so many different ways. These almond and cacao balls were no different than another kitchen experiment with anything I found in my pantry tonight. Some days when I have some free time to myself and nothing better to do I would spend a couple of hours in the kitchen, just experimenting and messing around with new ideas. I love how simple these are to make, yet how rich and tasty they are and not overly sweet. These are somewhat similar to the no-bake brownie bites recipe I posted not too long ago but have more of an almond flavor added to them.

Instructions
  1. Combine all of the ingredients except for the shredded coconut and extra cacao powder in a food processor fitted with a metal blade. Pulse for a couple of minutes to combine. The batter should be thick and sticky, not too runny.
  2. Pick up a small amount with your hands and roll into small balls. Prepare 2 small bowls with shredded coconut and cacao powder and roll the balls into each bowl to coat. These can be served immediately or chill in the fridge for an hour. * You can use anything else to roll the balls in like shredded nuts, melted chocolate etc.
