This french green beans & potato dinner recipe is a 2-in-1 dinner idea of two sides that together can be served as a meal for two. The green beans can be cooked while the potatoes are in the oven to save you time so you can have both ready within about 30 minutes. I served mine with some fresh cut avocado but also cooked grains or quinoa is a great choice as well.
If you like your potatoes a little more spicy you can add some cayenne pepper to the mix. I left it out in the recipe for those who prefer a more mild flavor. Eating plant based or vegan is not as complicated or challenging as it may seem. Here is one more example of plant cooking made simple.

French green beans & roasted potato dinner
To prepare the potatoes
Pre-heat the oven to 450F. Prepare a small baking sheet lined with parchment paper.
In a mixing bowl mix together the olive oil & spices. Wash and cut the potato into medium cubes and toss into the oil and spice mix until the potato is fully coated. Season with additional salt & pepper, to taste.
Place in the oven and bake for about 25-30 minutes. Flipping half-way through, until the potatoes are brown and crispy.
To prepare the green beans
Boil a small pot of water and cut the ends of the green beans. Add a pinch of salt to the water to season. Toss the green beans into the boiling water and blench for about 3 minutes. The green beans should not be fully cooked and a little crispy still. Take off the heat, strain and set aside.
In a frying pan saute the shallots with the olive oil for a couple of minutes until they soften and start to brown. Add the garlic and continue cooking for another minute.
Add the green beans to the onion and garlic mix and saute for a couple more minutes. Season with salt & pepper and serve along with the roasted potatoes.
