This is a basic Cuban style Yuca recipe. I don’t have tons of experience cooking Yuca so I had to do some research and testing. My friends and me had a similar dish at a local vegan buffet and we really liked it so I wanted to replicate that to share with my friends and this is what I came up with. Hope you like it. This is a side dish and can be served alongside your favorite veggie dishes or Spanish style rice & beans. The texture of the dish should be somewhat similar to mashed potato but not as soft and mushed.

What is Yuca?

The Yuca root, also known as cassava, is a dense, starchy food that’s rich in carbohydrates. It’s a good source of fiber, folate, vitamin C, and potassium. The Yuca root is also still referred to as Tapioca in northeast Brazil. The Yuca is commonly used in south & Central America, where it is originated.

Instructions
  1. Peel and slice the Yucas into 1/2 inch slices.
  2. Place the Yuca into a pan and fill with enough water to cover. Stir in salt. Bring to a boil over medium-high heat, cover, and cook until tender, about 25-30 minutes or until it's soft enough.
  3. While the Yuca is cooking, place the olive oil, onion, garlic, and lemon juice into a pan. Cook over medium heat about 5 minutes.
    Saute onions & garlic in olive oil
  4. Drain, and place yucca on a serving plate or back in the pot. Pour the hot olive oil mixture over the Yuca, mix in and add some fresh cracked salt & pepper. Serve immediately.
