These chunky vegan chocolateĀ  walnut cookies are a great sweet tooth snack. They are not overly sweet, soft, chewy and slightly crunchy. I often get asked by people how do you bake without eggs? simple. You don’t need eggs in most baking recipes. There is no egg replacement in these cookies. The coconut oil adds moisture and binds the ingredients together.

The danger with these cookies is, if you are like me and your pantry is always moderately stocked, you can make these within 30 minutes. Then there is nothing stopping you from snacking on them! if you don’t have walnuts, you can omit them or use any other nuts you like. That’s part of what I like about cooking & baking so much. You can make your own version by simply making small modification to the recipe.

Varying ideas:

  • Omit cocoa powder and chocolate extract
  • Add 1 tablespoon of peanut butter and chopped peanuts (if you are a peanut fan)
  • Try adding some chopped dried fruits in place of the chocolate chips for a more fruity flavor

Instructions
  1. Heat oven to 350Ā°F. In large bowl, mix coconut oil and granulated sugar until well mixed. Stir in almond milk, chocolate extract and vanilla.
  2. Stir in flour, cocoa powder, coconut, baking powder and salt until dough forms. Stir in chocolate chips. Using a small ice cream scoop, drop dough by into rounded balls and slightly flatten into disk using your fingers. Place cookies 2 inches apart onto parchment lined cookie sheets.

  3. Bake for about 14 minutes or until edges are light brown and tops look set. Cool 1 minute on cookie sheets. Remove to cooling rack; cool completely. Store in tightly covered container.
