Since I have been posting a lot of dessert, recipes here I’ve wanted to add some more easy go-to vegan dishes that you can make any day. No excuses for not eating healthy with these veggie patties! this is another fairly simple and healthy gluten-free recipe for my baked chickpea patties. One of the key ingredients in this recipe is chickpea flour, which can usually be found in the ethnic isle of your grocery store or in Indian food markets. If you can’t find chickpea flour, sprouted lentil flour is a great substitute too. This adds a healthy amount of protein to the patties and is gluten free. Baking the patties also makes them low in oil in comparison to frying them.

Varying ideas:

Try adding 1 russet potato, fresh chopped herbs or any choice seasoning for more flavor

Instructions
  1. Pre-heat the oven to 350F.
  2. Grade the carrot, onion and zucchini in a grader or process in a food processor.

  3. Add the chickpea flour and seasoning to the veggies and mix well to combine.
  4. Form patties in lightly oiled hands and place on a parchment lined baking sheet. Bake in the oven for approximately 15 minutes. Once the patties are baked on one side, flip them and bake on the other side for additional 15 minutes. Make sure not to over-bake.
