This chewy hazelnut & cinnamon cookies recipe was born on a Friday night. I was craving something sweet and wanted to come up with a new gluten free cookie recipe. I found a bag of hazelnut flour in my pantry that I forgot I bought and it sparked an idea. These cookies are not super sweet and have a strong nutty flavor so if you like it a bit sweeter you can use a whole cup of sugar.
If you can’t find hazelnut flour & butter, almond flour & butter work well too.
Chewy hazelnut & cinnamon cookies
Preheat the oven to 350°F
In a small bowl sift together the warm water and flaxseed meal and set aside to thicken.
In a large mixing bowl mix together the rest of the ingredients with a spatula and add the flaxseed mixture. The batter will be sticky. I got in there with my hands and gave it a good mix to combine.
Once all the ingredients are well mixed, scoop small portions using a small ice cream scoop and form little balls in your hands. Flatten them and place on a parchment lined baking sheet.
Place in the middle rack of the oven and bake for about 13 minutes. Remove from the oven and let completely cool before serving.
