These delicious little chickpea pockets are so much fun to make (and eat). If you like chickpeas as much as I do you will surly like this recipe. This also works well with cooked potatoes and green peas if you like Indian samosas. I try to keep my recipes simple and quick and this is another one of those recipes I’m likely to make when I don’t have a lot of fresh vegetables at home but still craving a warm cooked dish.

Instructions
  1. Preheat the oven to 400F.
  2. In a medium mixing bowl whisk together all the dough ingredients and knead to create a smooth and firm dough
  3. Knead the dough into a ball and roll over a piece of parchment paper with a rolling pin until the dough is flat and about 1/2 inch thick. Cut into rounds with a cookie cutter.
  4. In a separate bowl mix together the filling ingredients and mash well into a chunky paste. Spoon the filling into each dough round with a table spoon. Fold the dough over and seal with your fingers.

  5. Bake in the oven for about 15 minutes until the pockets are golden in color. Serve warm and enjoy.
