I served these little cute avocado party scoops at a dinner party recently. They are literally so easy to make and are simply delicious and healthy too! You don’t have to be an expert in the kitchen to whip these up. Some of my guests requested gluten free options so these were perfect healthy snack choice. You can make as many as you like depending on the size of your group, the portion is simply a recommendation. Make sure that your guacamole has a good amount of lemon juice so that it doesn’t turn an unappealing brown color.

 

Serving Note:

If you don’t like avocado you can top these with flavorful hummus & olives or any other vegan dip. Be sure to check out my pistachio pesto recipe for another good serving choice.

Instructions
  1. Spread out the scoop chips on a serving platter, discard (or eat) any broken ones.
  2. To prepare the avocado filling, finely chop the basil leaves and set aside, mash the avocados in a small bowl, add chopped basil, lemon juice and salt & pepper. Mix to combine.
  3. Put about 1 rounded teaspoon of guacamole in the center of each scoop chip.
  4. To garnish top each with a slice of cherry tomato.
