These cookies are soft and melt in your mouth and are so addictive. You can always be creative with basic items you already have in your pantry and come up with a tasty dessert recipe. I made these on a lazy Sunday, it’s been time to get groceries as my fridge was empty but I still decided to experiment and bake some cookies with what I did have so here is the result. These are nice as a side snack with a cup of hot tea or coffee too.

Instructions
  1. Heat the oven to 350 Fahrenheit.
  2. Line a cookies baking sheet with parchment paper or silicone mat. In a medium mixing bowl sift and mix together the flour, baking powder, cinnamon, oil and maple and mix until you get a thick and sticky dough. If the dough is too dry and crumbly gradually add 1-3 more tablespoons of oil. If the dough is too wet and sticky gradually add 1-3 more tablespoons of flour and continue mixing and kneading.
  3. On your counter spread a parchment paper, place the dough over the paper and cover with another sheet of parchment paper and flatten the dough using a rolling pin until the dough is about 1/2 thick. Cut the cookies into your desired shape using a cookie cutter.

  4. Gently and place on the prepared baking sheet as they are very delicate and can break. Bake the cookies for about 12 minutes and leave out to cool completely. The cookies will become crispy as they cool.
