This is a nontraditional way of creating a mousse but when done right it works beautifully and has a rich flavor and creamy texture. All you need is water, dark chocolate and an ice bath prepared to cool the chocolate. Give it a go, I’m sure you would enjoy it as much as I did.

Instructions
  1. To start, chop the chocolate into small pieces and set aside. Then have a bowl ready and filled about halfway with ice cubes and some water and one medium bowl that fits inside the ice-filled bowl. Set the bowls aside separately.

  2. Pour the water into a medium saucepan. Add the chopped chocolate and whisk over medium-low heat until the chocolate has melted into a smooth sauce. Next, pour the chocolate sauce into the medium bowl and set it into the "ice bath" bowl.

  3. Whisk only until the chocolate has thickened enough so that tracks from the whisk are faintly visible, then stop. The mousse will look like soft chocolate whipped cream, but will thicken and become denser as it sets in room temperature. If the consistency of the chocolate feels too watery and does not thicken enough, try adding more melted chocolate and keep whisking until the chocolate becomes smoother
  4. Pour or spoon into serving dishes and if you wish to you can sprinkle with some fine sea salt or any other toppings and serve immediately or refrigerate before serving.
